Via 313 Austin, TX

Pizza is one of the trickiest foods to find safely gluten-free. While many chains now offer gluten-free crusts, cross-contact risk in a traditional pizza kitchen is high. I completely understand why many people choose to skip ordering pizza out and instead make their own at home or rely on frozen options.

However, as an Austin original with strong local reviews, I hoped Via 313 would take gluten-free orders seriously. And I was not disappointed.

Environment at Via 313

Via 313 started as a single pizza trailer, very Austin, and has since significantly grown with locations in and out of Texas. I used to visit the downtown trailer located inside Buford’s, a lively bar known for hosting watch parties and events.

The setup is fun and casual. The trailer operates inside the bar space, which includes games, large TV screens, and plenty of energy, especially on football game days. Before social distancing, there were tables near the trailer where you could sit and enjoy your pizza. These days, they also offer takeout, making it a convenient option whether you’re dining in or bringing pizza home.

The first time I visited Buford’s, I didn’t even realize Via 313 offered a gluten-free crust and I’m still disappointed about that missed opportunity. Their pizza is good enough to be upset about when you don’t order it.

Food

Most of my visits to Via 313 have been on football game days. There’s something especially fun about pairing pizza with a local Austin cider while watching a game.

Via 313 is known for Detroit-style pizza. If you’re unfamiliar, Detroit-style pizza features a thicker, airy crust with crispy edges and sauce layered on top of the toppings. It’s hearty, satisfying, and admittedly a bit messier than traditional pizza, but in the best way.

When it comes to toppings, I tend to keep things simple and usually order a classic cheese pizza on a gluten-free crust. That said, Via 313 offers an extensive list of toppings and creative combinations, along with dairy-free cheese options and meat alternatives. Whether you’re gluten-free, dairy-free, or navigating multiple dietary restrictions, there are solid options to choose from.

One of my favorite things about Via 313’s gluten-free crust is that it’s thicker than most gluten-free pizza crusts. Many gluten-free crusts are thin, largely due to the structure that gluten provides in traditional dough. As someone who grew up loving thick-crust pizza, I’m always excited when I find a gluten-free option that delivers both texture and structure. Via 313’s gluten-free crust is probably in the top 5 gluten-free pizza crust I’ve had. It’s substantial, flavorful, and satisfying.

The toppings are high quality and well-balanced, which does come with a higher price point. For me, this is more of a treat meal than an everyday option. Back in 2019-2020 a four-piece gluten-free pizza would run close to $20 with tip. While that’s not something I was able to do regularly at the time, it’s was fun to splurge. And I’ve since learned that I do value spending money on good food.

From a safety perspective, I’ve had positive experiences. Even in a small trailer kitchen, service has been efficient, and I have not experienced issues with cross-contact during my visits. As always, though, comfort levels vary from person to person when it comes to dining out with celiac disease.

Final Thoughts on Via 313

Via 313 is a great example of a local Austin restaurant that has grown while maintaining its original personality. I love supporting small, local businesses, especially ones that make an effort to offer gluten-free options.

For me, Via 313 felt like a reliable and enjoyable option for gluten-free pizza in Austin. That said, if pizza kitchens feel too risky for you due to cross-contact concerns, that is completely valid. There are many other cuisines and restaurants in Austin that may feel more comfortable.
